Mixed Grain Flax Sandwich Loaf
1 cup unbleached white wheat flour
1 1/4 cup whole wheat flour
2 TBSP vital wheat gluten
1 cup oat flour
1 TPSP ground flax
1 tsp kosher salt
1 cup warm water
1/4 cup almond milk
1/3 cup honey
1 TBSP olive oil
mix up all ingredients.
let sit for 20 minutes.
knead on mixer for 8 minutes - on low setting with bread hook.
rise for 3 hours. punch down, rise again for 2 more hours.
Bake at 395 degrees for 25 minutes.
The all wheat loaf from last wednesday was a little too dense, but had a nice flavor.
